In large skillet, bring 2 cups water, rice, pineapple juice, apricots, cranberries and curry powder to a boil. Cover; reduce heat and simmer 15 minutes or until rice is tender and liquid is absorbed.
Add turkey to rice. Cover and cook over low heat 5 minutes or until turkey is hot.
