| 1/2 | cup | chopped onion | |
|
|
|||
| 1 | clove | garlic, minced | |
|

|||
| 1 | can | (15 oz.) black beans, drained, rinsed | |

| 1 | can | (14 1/2 oz.) whole tomatoes, undrained, cut up | |
|
|
|||
| 1/2 | lb. | cooked turkey or ham, coarsely chopped | |
|
|
|||
| 1/2 | teaspoon | dried oregano leaves | |
|
|
|||
| 1/8 | teaspoon | ground red pepper (cayenne) | |

| 1 | bay leaf | ||

| 2 | cups | hot cooked rice | |
|
|
|||
Heat oil in large skillet over medium-high heat. Add green pepper, onion and garlic; cook and stir until crisp-tender.
Stir in beans, tomatoes, turkey (or ham), oregano, ground red pepper and bay leaf; simmer 10 minutes. Remove bay leaf. Serve bean mixture over rice.
