Place grapefruit sections and pineapple chunks in a bowl and set aside. Combine grapefruit juice and pineapple juice and add enough water to equal 1 cup liquid. Whisk cornstarch and soy sauce into juice mixture.
Heat oil in a large skillet over medium heat. Stir-fry chicken for 3 minutes. Add garlic and continue cooking for 2 minutes longer or until lightly browned.
Add snow peas and juice mixture; cook, stirring until thickened. Add grapefruit, pineapple and green onions and cook until heated through.
Serve over hot rice.
