Lean Tortilla Casserole

A Healthy* recipe

Yield: 8 servings

Ingredients

2 lbs. fresh lean ground turkey breast
1 medium onion, chopped
1 bottle (8 oz) taco sauce
6 corn tortillas, cut into strips
1 container (16 oz) sour cream
4 ounces shredded cheddar cheese
4 ounces shredded mozzarella cheese

Directions:

Crumble turkey into a large microwave safe dish. Stir in onion. Microwave, uncovered on HIGH for 8-10 minutes ir until meat is no longer pink, stirring and draining every 2 minutes. Stir in taco sauce and tortillas.

In a greased 2 1/2 quart microwave dish, layer half of the beef mixture, sour cream and cheeses. Repeat layers.

Cover and cook at 70% power for 10 to 11 minutes or until heated through.

Let stand 4 minutes before serving.

*The Lean Casserole dish is under 500 calories and under 10 grams of fat per serving.

*Substitute with reduced fat cheeses to further reduce the calories and fat of the meat.

*This meal is an excellent source of both protein and calcium.
