Black Eyed Pea Sausage Stew

Yield: 6 servings

Ingredients

1 package (16 ounce) smoked sausage links, halved lengthwise and sliced
1 small onion, chopped
2 cans (15 ounce each) black-eyed peas, rinsed and drained
1 can (14 1/2 ounce) diced tomatoes, drained
1 can (8 ounce) tomato sauce
1 cup beef broth
1/4 teaspoon garlic powder
1/4 teaspoon cajun seasoning
1/4 teaspoon pepper
1/8 teaspoon salt
1/8 teaspoon cayenne pepper
1/8 teaspoon hot pepper sauce
1 1/2 cups frozen corn, thawed

Directions:

In a large skillet, cook sausage and onion over medium heat until meat is lightly browned; drain.

Stir in the peas, tomatoes, tomato sauce, broth and seasonings. Cook and stir for 10-12 minutes or until hot and bubbly.

Stir in the corn; cook 5 minutes longer or until heated through.
