| 1 | lb. | U.S. farm-raised catfish fillets | |

| 1 | tablespoon | olive oil | |

| 2 | tablespoons | lime juice | |

|||
| 1/2 | cup | Chardonnay wine | |
|
|
|||
| 1 | tablespoon | dry mustard | |
|
|
|||
| 1 | tablespoon | chili powder | |
|
|
|||
| 1 | teaspoon | pepper | |
|
|
|||
| 1/4 | cup | fresh cilantro, chopped | |
|
|
|||
| 1/4 | teaspoon | salt (optional) | |
|
|
|||
| 1 | tablespoon | melted butter | |
|
|
|||
| 1 | teaspoon | chopped parsley | |
|
|
|||
Mix olive oil, lime juice, Chardonnay, dry mustard, chili powder, pepper, cilantro and salt (optional) in medium bowl. Add catfish to bowl; marinate for 15 minutes.
Drain fillets; place on a lightly oiled grill 4-inches above hot coals. Grill about 5 minutes per side or until fish flakes when tested with a fork. Baste with marinade while cooking. Discard remaining marinade.
Stir chopped parsley into melted butter and brush over each fillet just before removing from grill.
