| 1 | teaspoon | grated lemon zest | |

| 1 | pint | strawberries or raspberries | |

| 1 | pre-baked pie shell | ||

In a food processor or blender beat the ricotta, sugar, honey and lemon zest until smooth. Clean berries and fill the pastry shell with the ricotta cheese mixture and top with the berries. Serve at once.
