Ranchero Corn

Serve it up straight from the skillet!

Yield: 6 servings

Ingredients

6 slices bacon, diced
1 can or jar (4-1/2 oz.) sliced mushrooms, drained
2 Tablespoons onion, finely chopped
2 cans (11 or 12 oz.) whole kernel corn, drained
1 can (4 oz.) diced green chilies
3/4 cup grated cheddar cheese

Directions:

Fry diced bacon in skillet over medium heat until cooked but not brown; drain off excess fat. Stir in mushrooms and onion; saute until tender.

Blend in corn; heat through.

Sprinkle with cheese and heat without stirring until cheese is melted.
