Serve it up straight from the skillet!
Yield: 6 servings
| 6 | slices | bacon, diced | |

| 1 | can or jar | (4-1/2 oz.) sliced mushrooms, drained | |
|
|
|||
| 2 | Tablespoons | onion, finely chopped | |
|
|
|||
| 2 | cans | (11 or 12 oz.) whole kernel corn, drained | |
|
|
|||
| 1 | can | (4 oz.) diced green chilies | |
|
|
|||
| 3/4 | cup | grated cheddar cheese | |
|
|
|||
Fry diced bacon in skillet over medium heat until cooked but not brown; drain off excess fat. Stir in mushrooms and onion; saute until tender.
Blend in corn; heat through.
Sprinkle with cheese and heat without stirring until cheese is melted.
