Rosemary Lamb Chops

Yield: 4 servings

Ingredients

8 loin lamb chops
1 teaspoon dried rosemary
1 Tablespoon fresh lemon juice
3 cloves garlic, minced
3 Tablespoons olive oil
Salt to taste
Pepper to taste

Directions:

Place lamb chops in a glass dish.

In a small bowl, mix together rosemary, lemon juice, garlic, olive oil, salt and pepper. Rub seasonings into both sides of meat. Cover and allow to marinate a minimum of 1 hour or overnight, refrigerated.

Place chops on well oiled broiling pan and broil, turning once or twice, until browned outside and still slightly pink inside, about 15 minutes to an internal temperature of 160 F for medium or 170 F for well done.
