| Herb Butter: | |||
| 4 | Tablespoons | butter, softened | |
|
|
|||
| 2 | cloves | garlic, crushed | |
|
|
|||
| 4 | Tablespoons | fresh basil, finely chopped | |
|
|
|||
| 3 | Tablespoons | chives, snipped | |
|
|
|||
| 4 | Tablespoons | fresh parsley, finely chopped | |
|

|||
| salt, to taste | |||

| pepper, to taste | |||

Preheat barbecue grill to medium hot. Pound chicken breasts to even thickness. Season with salt and pepper to taste.
In a small bowl, blend together butter, garlic, herbs and salt and pepper to taste. Place chicken breasts on oiled grill rack. Grill chicken for approximately 8 to 10 minutes, turning once until browned and juices run clear.
Remove chicken from grill and refrigerate 2 chicken breasts to use in another recipe (search our files for recipes using leftover cooked chicken) . Place remaining 4 chicken breasts on serving platter and top with herb butter.
